WHY WE CHOSE THIS COFFEE

Java is a coffee we turn to when we want clarity and refinement.

We brew this coffee as pour-over in the café because it highlights nuance without feeling delicate — structured, composed, and rewarding to drink slowly.

Java carries gentle fruit notes — think stone fruit and a hint of citrus — layered into a cup that still feels balanced and calm. The fruit shows up as sweetness and lift, not sharpness.

This coffee uses an anaerobic natural process, where whole coffee cherries ferment in sealed, oxygen-free tanks. Limiting oxygen during fermentation allows sweetness, body, and complexity to develop more fully, while the natural process preserves fruit character.

High altitude and thoughtful farming allow the coffee to develop exceptional sweetness and body, while preserving clarity and complexity.

It’s best enjoyed when you want to slow down and notice a little more — subtle fruit, clean sweetness, and a calm finish that stays with you. At home, it also works well as a careful drip brew if you enjoy a cleaner, more structured cup.
